Japanese matcha contains many beneficial nutrients, and many scientific studies support its positive impact on health (see the scientific articles tab in this section).  Of the nutrients present in matcha, the ones most strongly correlated with health benefits are the catechins, a group of potent antioxidants. Of these, EGCg (epigallocatechin gallate) has been determined to have the most positive effects.

EGCg, alone and in combination with caffeine, also present in matcha, has been shown to reduce occurrences of many life-style related diseases. While not an exhaustive list, research supports that EGCg helps by:

  • improving cardiovascular circulation
  • lowering blood sugar
  • increasing metabolism
  • lowering LDL cholesterol levels (low-density lipoprotein or "bad" cholesterol)
  • fighting cavity-causing bacteria

  • Pure matcha green tea powder; Certified USDA Organic, non-GMO
  • Contains NO soy, dairy, nuts, filler ingredients, artificial colors, flavors, sweeteners, or preservatives.  NOTHING BUT MATCHA!

Testing and Certifications

  • Certified USDA Organic by JONA.  Aside from restrictions on fertilizers and pesticides, organic certification requires crops to be non-GMO and also requires meticulous cleaning, record-keeping, and labeling.
  • The farmlands where our matcha is grown can be found in an area recognized by the Food and Agricultural Organization (branch of the United Nations) as a Globally Important Agricultural Heritage System (GIAHS). This certification was received for traditional, sustainable farming practices, creating a symbiosis between the farmers and the environment.
  • All our matcha is extensively and rigorously tested by independent third-party testing agencies for nutritional content, heavy metal concentrations, agrochemical residues, and radioactivity each year and upon request.

Expiration  

  • For optimal flavor and freshness, consume within three (3) months after you open the packet.  All of our packets are labeled with a "best by" date.  When unopened and refrigerated, our matcha retains it quality and freshness for two years from the date it was ground.  
  • Our matcha is flushed with nitrogen when packed to remove any oxygen in the packet.  Oxygen, or more specifically oxidation, is the greatest "enemy" of matcha and the primary cause for a rapid decrease in freshness which affects the flavor and texture of the delicate powder.  Our matcha is packaged in small batches to ensure you are receiving the freshest matcha possible.

Storage

  • Store in a cool, dry, dark place.  Refrigeration is preferred.  Refrigeration will keep your matcha fresh the longest.  
  • Gently pinch as much air out of the packet without spilling any matcha and seal the packet tightly.  This helps to minimize the amount of oxygen and moisture in the packet when stored after opening.  

Step-by-Step Instructions

  1. Heat water to 185F or allow fully boiled water to cool down (~3 mins).  It should feel hot but not scalding. 
  2. Grab your matcha bowl (Cha Wan) and your bamboo whisk (Cha Sen)
  3. While the water heats, add 1/2 tsp to 1 tsp (1.5g - 2g) of matcha to your bowl with a measuring spoon or a bamboo matcha scoop (Cha Shaku).  The scoop easily measures 1/2 - 1 tsp.  For best results, sift the matcha through a small strainer. This helps to prevent clumping.  If no strainer is available, use your whisk to break up any clumps prior to pouring the water.  
  4. Gently pour 2 - 6oz. of water into the bowl.  The amount of water used depends on how strong you prefer your tea.  Use less water for a stronger matcha, or more water for a weaker one. 
  5. Gently run your whisk along the bottom of the bowl to "scrape up" any matcha stuck to the bottom.
  6. Hold your whisk vertically, from the top, not from the side.
  7. Use your wrist to RAPIDLY whisk in a straight "I" line from one edge of the bowl to the other.  It's all in the wrist.  Keep your arm steady.  Try to keep the whisk from touching the bottom of the bowl.  Proper whisking technique takes some practice so have patience.
  8. Continue to whisk for 15-30 seconds which should whip up a nice froth on top of the matcha.  You are looking for a foam with smallish bubbles.
  9. After the matcha is covered with bubbly foam, slow your whisking down gradually. Change from the "I" pattern to a "W" pattern moving your whisk around the bowl to pop any large bubbles.
  10. When you see a calm frothy surface, gently circulate the whisk and lift it up elegantly.
  11. Enjoy this moment of active and nourishing zen. 
  12. If you don't have a bamboo whisk, you can use any ole' whisk, a blender, or a frother to bring the matcha into solution and create a frothy top.  Additionally, shaking the matcha in a bottle works quite well.  
  13. If you don't have a matcha bowl, you can use any ole' bowl.  You may also choose to simply use a mug.  You can spin a whisk in a mug of matcha to work up the foam.  You can also rapidly stir the matcha in a mug with a small spoon, or better, with a fork.
